~makes about 15 regular cupcakes~
1 cup carrots (peeled n trimmed)
1 cup raisins
2 eggs (kalu guna gred C=3 biji)
3/4 cup caster sugar (preferably golden)
120ml corn oil
1/2 tsp vanilla
2 tsp grated zest of 1 orange
1 cup flour
1 tsp bocarbonate of soda
1 tsp cinnamon
1) preheat oven to 160 C
2) grate the carrots n combine with raisins in a large bowl... put to one side
3) beat the aggs n sugar together for several minutes
4) add oil, vanilla n orange zest... beat well
5) sift the flour, bicarbonate of soda n cinnamon into a separate bowl and add these ingredients to the egg n sugar mixture.... beating well
6) pour carrots n rainsins n incorporate using spatula until they are evently blended
7) carefully spoon the mixture into cupcake casses, filling them to about two-thirds full
8) bake in the oven for about 25 minutes
9) icing them with orang cream cheese icing, nice to finish them off with a sparkling of cinnamon
*** the cupcakes will be quite dark brown in colour n feel 'spongy' to the touch
*** remove from the oven and leave the cupcakes in their tins for about 10 minutes before cafully placing on the wire rack to cool
